Signs sea urchin uni has gone bad

  • A rotten-fish or ammonia smell instead of clean iodine.
  • A harsh bitterness in place of the sweet, nutty taste.
  • Roe that has gone slack, runny or melted into slime.

When in doubt, throw it out — the cost of a spoiled meal isn't worth the risk.

Best way to store sea urchin uni

Comes two ways. LIVE urchins are like oysters — they must be alive until you open them; if the spines don't move and the mouth (the 'Aristotle's lantern') is limp it's dead and dangerous to eat raw. Keep them in the coldest part of the fridge under a damp cloth, NEVER in fresh water or a sealed container, which suffocates them, and use within a day. Shucked UNI ROE is premium and fragile: it 'weeps' and melts into a bitter slime if the temperature is abused, so use it the day or two you buy it. You CANNOT freeze fresh uni — it turns to soup on thaw; only commercial alum-treated frozen uni survives the freezer, thawed slowly overnight in the fridge.
