Signs oysters have gone bad

  • A shell that stays gaping and won't close when tapped.
  • A foul, sulphur smell instead of clean sea air.
  • Dry, shrivelled meat with no briny liquid in the shell.

When in doubt, throw it out — the cost of a spoiled meal isn't worth the risk.

Best way to store oysters

Keep them alive in the fridge cup-side down on a bed of ice under a damp towel so they hold their liquor — never submerged in fresh water and never sealed in an airtight tub, which both kill them. Test each one before eating: a shell gaping open that won't snap shut when you tap it means the oyster is dead, so toss it.
