Unopened, coconut oil keeps in the pantry for around 2 years. Once opened, use it within about 6 months for best quality and safety.

Times are for unopened, properly stored coconut oil and reflect best quality. Always use your senses and follow any date on the package.
Signs coconut oil has gone bad
- Rancid, paint-like, or bitter smell — the main sign oil has turned.
- Cloudiness or sediment (some is normal when cold; rancidity is not).
- Off or stale taste.
When in doubt, throw it out — the cost of a spoiled meal isn't worth the risk.
Best way to store coconut oil
Keep oils in a cool, dark cupboard away from heat and light, which speed up rancidity. Seal tightly after use. Some delicate oils (flaxseed especially) keep longest in the fridge.
