Signs beetroot has gone bad

  • Soft, mushy, or slimy spots.
  • Mould, dark patches, or an unpleasant smell.
  • Heavy wilting, shrivelling, or sprouting.

When in doubt, throw it out — the cost of a spoiled meal isn't worth the risk.

Best way to store beetroot

Most vegetables keep best in the fridge crisper drawer; a few (potatoes, onions, garlic) prefer a cool, dark, dry pantry — never the fridge. Don't wash produce until you're ready to use it, since extra moisture speeds up spoilage. Many vegetables freeze well after blanching.
