How long does liver last? Fridge, freezer & pantry

Stored properly, liver keeps in the fridge for 1 day and in the freezer for about 3 months. Once cooked or cut, use it within about 1 day.

Signs liver has gone bad

  • Sour, ammonia-like, or generally off smell.
  • Slimy or sticky surface film.
  • Grey-green discolouration or a dull, tacky sheen instead of fresh colour.

When in doubt, throw it out — the cost of a spoiled meal isn't worth the risk.

Best way to store liver

Keep raw meat on the bottom shelf of the fridge so juices can't drip onto other food, and use it within a couple of days. For longer storage, freeze it: wrap tightly to push out air and prevent freezer burn, and label it with the date.
