Ingredients
- 2500 ml beef broth
- 500 g boiled beef tongue
- 350 g boiled-smoked brisket
- 250 g mixed smoked sausages
- 200 g red onion
- 20 g butter
- 100 ml pickled cucumbers
- 50 g capers
- 70 ml olives
- 40 g tomato paste
- 1 clove garlic
- to taste lemon
- to taste salt and pepper
- parsley and dill for serving
Method
- Cut the meat delicacies (tongue, brisket, salami) into cubes or strips. Heat the broth on a medium flame.
- Finely chop the red onion and sauté until golden in butter and olive oil, add garlic and tomato paste. Sauté the mixture for another minute on low heat. Then add the cucumbers and cook for another minute.
- Bring to a boil, add capers and olives — stir and keep for another 5 minutes. Season with salt and pepper to taste. Turn off the heat and let the soup rest for 10 minutes. Serve with fresh greens and lemon.
