Ingredients

  • 1 kg chicken drumsticks
  • 30 g olive oil
  • lemon juice
  • 100 g pitted olives
  • 20 g capers
  • 10 g honey
  • 10 g ginger root
  • 1 clove garlic
  • lemon zest
  • to taste salt and pepper
  • chili and spinach for serving

Method

  1. Grate the ginger and garlic on a fine grater.
  2. Mix all marinade ingredients until smooth: olive oil, lemon juice, zest, garlic, ginger, salt, and pepper.
  3. Toss the drumsticks in this marinade, adding sliced olives and whole capers. Leave to marinate for at least 1 hour at room temperature.
  4. Remove the drumsticks from the marinade, transfer to a greased baking dish, and roast in an oven preheated to 180 degrees for 35 minutes.
  5. Pour the remaining marinade over the drumsticks, increase the temperature to 200–220°C, and bake for another 10–15 minutes until golden brown.
