Ingredients
- 300 g cottage cheese 5% fat
- 1 pcs egg yolk (category C1)
- 50 g sugar
- 50 g mozzarella
- 30 g wheat flour (or rice flour)
- 10 g cornstarch
- to taste salt
- to taste pepper
Method
- Mash the cottage cheese with a fork together with the egg yolk. Grate both cheeses on a fine grater, add to the mixture along with salt and pepper. Mix well. Add flour and starch and mix again until uniform.
- Shape the pancakes (40–50 g each) and fry on both sides in a well-heated pan over low heat for about 3 minutes per side.
