Chicken Wings in Unagi Sauce

Ingredients

  • 1 kg chicken wings
  • 30 g unagi sauce
  • 30 g soy sauce
  • 10 g ginger root
  • 10 g wine vinegar (white)
  • 10 g olive oil
  • to taste salt and pepper

Method

  1. Peel the ginger root and grate it on a fine grater.
  2. Add all remaining ingredients to the wings and mix well. Marinate for 2–4 hours in the refrigerator, then cook or transfer to the freezer. It is most convenient to do this in zip-lock bags, draining off any liquid before sealing.
  3. Line a baking tray with parchment paper, or use a greased ovenproof dish. Lay the wings in a single layer and bake at 200°C for about 30–35 minutes, turning halfway through so they brown on both sides.
