Ingredients
- 2 pcs chicken fillet
- 60 g flour
- 2 pcs eggs
- 100 g breadcrumbs "Panko"
- to taste salt and pepper
- fresh salad greens and lemon for serving
Method
- Slice the fillet into fairly thin pieces (5–7 mm) and pound each piece slightly. The goal is an even thickness.
- Set up a breading station: flour → beaten egg → Panko breadcrumbs. Season with salt and pepper.
- Dip each schnitzel in egg, then coat immediately in breadcrumbs.
- Pan-fry each schnitzel in a well-heated pan with oil for about 2 minutes per side, then transfer to a plate.
- Wrap two schnitzels back to back in baking paper, roll up tightly, and freeze for up to 3 months.
