How to freeze Chicken Schnitzel

Bread the schnitzels raw, wrap two back-to-back in baking paper, and freeze for up to 3 months without pre-cooking.

How to reheat Chicken Schnitzel

Fry straight from frozen in a hot oiled pan, a couple of minutes longer per side than fresh, until golden and cooked through.

The one thing a label can't tell you is when you froze it. Label it properly — or let Expireless hold the date for you.

Ingredients

  • 2 pcs chicken fillet
  • 60 g flour
  • 2 pcs eggs
  • 100 g breadcrumbs "Panko"
  • to taste salt and pepper
  • fresh salad greens and lemon for serving

Method

  1. Slice the fillet into fairly thin pieces (5–7 mm) and pound each piece slightly. The goal is an even thickness.
  2. Set up a breading station: flour → beaten egg → Panko breadcrumbs. Season with salt and pepper.
  3. Dip each schnitzel in egg, then coat immediately in breadcrumbs.
  4. Pan-fry each schnitzel in a well-heated pan with oil for about 2 minutes per side, then transfer to a plate.
  5. Wrap two schnitzels back to back in baking paper, roll up tightly, and freeze for up to 3 months.
