Ingredients

  • 1.4 kg chicken drumsticks
  • 20 ml olive oil
  • 5 g spice mix (thyme, basil, garlic)
  • 20 g grainy mustard
  • 15 g wine vinegar

Method

  1. Combine all ingredients with the drumsticks and mix well. Marinate for 2–4 hours in the refrigerator, then either cook immediately or transfer to the freezer as a make-ahead prep.
  2. Place the drumsticks on a parchment-lined baking sheet or in a greased dish, and bake in a well-preheated oven at 190°C for about 45–50 minutes, turning so both sides brown evenly.
