How to freeze Chicken Broth

Cool the strained broth completely, then freeze flat in bags or in an ice-cube tray for small portions - up to 6 months.

Thaw in the fridge or drop the frozen block straight into a pot and simmer gently until melted and hot.

Ingredients

  • 1 pcs chicken carcass
  • 200 g carrots
  • 200 g onion
  • 3 l water
  • 3 pcs eggs
  • 2 cloves garlic

Method

  1. Rinse the chicken carcass and cut it into pieces. Add coarsely chopped carrots and onion, and bring to a boil over high heat. Once boiling, skim the foam, reduce the heat, and simmer gently for about 2 hours.
  2. Once the broth is done, strain everything out, cool it slightly, and clarify it: beat the egg whites with the shell, pour into the warm broth, and bring back to a gentle boil. The whites will bind the cloudiness and rise to the surface.
  3. Strain the clarified broth through a fine sieve or cheesecloth and let it cool completely. Skim off all the fat from the surface — easiest done once fully cold. Freeze in portions.
