Let leftover ribs cool completely, wrap tightly in foil, and freeze for up to 3 months.

Thaw in the fridge, then reheat low and covered at 150°C / 300°F until warmed through, brushing with a little extra sauce.

Ingredients

  • 1000 g pork ribs
  • 5 g smoked salt
  • 20 g cane sugar
  • 10 g smoked paprika
  • 30 g ketchup
  • 50 g BBQ sauce
  • 10 g honey
  • 10 g soy sauce

Method

  1. Remove the membrane from the back of the ribs.
  2. Mix all dry rub ingredients together and rub generously into both sides of the ribs.
  3. Wrap each rack in 2–3 layers of foil and refrigerate to marinate for at least 5 hours, ideally overnight.
  4. Bake in a preheated oven at 170°C for 2 hours.
  5. Mix all glaze ingredients together and brush generously over the ribs. Return to the oven for another 10 minutes at 170°C.
